1 cup uncooked orzo; cook according to directions
1 cup crumbled feta cheese
cup purple onion
red bell pepper
cup yellow bell pepper
cup diced celery
cup cherry tomatoes, diced (or oz sun-dried tomatoes)
cup sliced black olives (or more)


Dressing:
tsp pepper
4 TBS red wine vinegar
4 tsp olive oil
tsp cracked red pepper

Directions:

Combine orzo with all ingredients; toss with dressing; serve immediately at room temperature.
