6 lettuce cups
cup celery
cup water chestnuts
cup green pepper
cup scallions
cup sweet gherkins
4 cups diced cooked chicken (chopped very fine)

Combine all ingredients in large salad bowl. Pour curry mayonnaise over top. Chill
Serve in lettuce cups

Curry Mayonnaise
2/3 cups mayo
2 TBS no fat half-and-half
1TBS tarragon vinegar
1 tsp curry powder or to taste
tsp black pepper
