2 3/4 c. chicken broth
1/4 c. heavy cream
1 med. russet potato
2 c. kale
1/2 lb. spicy Italian sausage
1/4 tsp. salt
1/4 tsp. crushed red pepper flakes

Directions:
Directions:
Combine broth and cream in medium saucepan over medium heat. Slice unpeeled potato into 1/4" slices, then quarter slices and add to soup. Wash the kale and pat it dry, then add the kale to the soup. Grill or saute sausage. When cooked and cooled, cut into 1/2" slices and add to the soup. Add the spices and let the soup simmer for about an hour. Stir occassionally.

This recipes was taken from the Olive Garden website in May 2007. I think you could replace the kale with spinach with no problems.
