Ingredients: 1 c. cubed cooked chicken (turkey) 3 T margarine 3 T flour 1/2 c finely chopped celery 1 c cooked wild rice 1/2 diced medium onion Salt/pepper to taste 1 can (10 3/4 oz) chicken broth 2 c milk

Directions:Melt margarine in saucepan. Saute' onions and celery until tender - crisp. Stir in flour, salt, and pepper. Add chicken broth and milk. Stir until thickened. Add wild rice and chicken. |

Notes: This recipe was developed after eating some wild rice soup in a restaurant near Lake Mille Lacs in MN. It was been taken to many get-togethers and has always received rave reviews. Additional suggestions: 1. Use canned chicken breast, flaked, and cut up chicken breast for texture. 2. Add finely chopped carrots--provides color. 3. Add 1/4 cup raw white rice, cooked with wild rice, and 1 cup water. 4. You can substitute chicken bouillon for chicken broth. 5. Add a touch of celery seed.
