1 cup butter, softened
1/2 cup powdered sugar
1 teaspoon coconut extract
1 teaspoon vanilla extract
2 1/ cups flour
1 1/2 tablespoons lemon rind
1/2 teaspoon salt
1 cup coconut
1 1/2 cups powdered sugar

Directions:
Directions:
Beat butter until creamy; add 1/2 cup powdered sugar and extracts; add flour, lemon rind and salt. Stir in coconut. Cover and chill dough 30 minutes.

Shape dough into 1 inch balls; place 1 inch apart on baking sheets. Bake at 350º for 15-20 minutes, until golden on bottom, and pale on top. Cool 5 minutes.

Place 1 1/2 cups powdered sugar in bowl and roll warm cookes in sugar, coating well. Cool completely; roll in powdered sugar again.
