1 lb Macaroni, cooked
1 ½ c Cheddar Cheese, grated
1 can Whole Tomatoes, cut up
2 tbsp Butter
2 tbsp Flour
1 ¼ c heated Milk
Cayenne Pepper

Melt butter in a heavy sauce pan
Stir in the flour & cook, stirring constantly until the paste cooks and bubbles a bit, don’t let it brown
Add the heated milk to sauce and continue to stir as sauce thickens
Bring to a boil
Add salt, pepper and cayenne pepper to taste
Lower the heat and add the ½ cheddar cheese
Cook for 2 or 3 more minutes
Preheat oven to 375 º
Butter a 1 ½ quart casserole dish
Put the macaroni in the casserole dish
Pour the cheese sauce over the macaroni and mix gently
Sprinkle with remaining cheddar cheese evenly over the top
Sit in tomatoes
Bake for 30 minutes
