1/2 c. margarine or butter
1 1/2 c, brown sugar
1 egg
2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1 c. buttermilk or (3 tbsp. powdered buttermilk, and 1 c. water)
1 tsp vanilla
2 c. rhubarb

TOPPING:

1/2 c. sugar
1 tsp. cinnamon
1/2 c. nuts, chopped
Directions:
Directions:
Cream margarine or butter and sugar together, add the egg and vanilla. Beat well. Sift dry ingredients together and add alternately with buttermilk. Cut rhubarb in fine pieces and add to batter. Pour into greased and floured or pam sprayed 9x13 inch pan and sprinkle with topping.
Bake for 40 minutes at 350 degrees. Change of pace use apples instead of rhubarb.
