8 to 10 oz. Brie cheese, 8 oz. Crimini mushrooms, sliced, 8 to 10
large raw shrimp, peeled and deveined, 1/2 cup olive oil, 1/2 cup
white wine, 2 tbsp chopped garlic, 2 tbsp shallots, 1 1/2 to 2 cups
chopped Roma tomatoes, seeded, 2 tbsp chopped parsley, 2
tbsp pine nuts, 2 tbsp fresh basil, Reggiano cheese, shaved, to

Toast pine nuts and bring water for pasta to a boil. Saute
mushrooms in butter and olive oil, set aside. Add pasta to
water and cook 12 minutes. Heat oil in large frying pan, add
tomatoes, garlic, parsley, and basil and cook 5 minutes.
Cook shrimp in butter and garlic. Do not overcook. Add
mushrooms to tomato mixture, heat. add Brie cheese, melt
into tomato mixture. You may add chicken broth or white wine
to thin if desired. Combine pasta and sauce, toss. Add pine
nuts and garnish with cheese. Top with shrimp.
