2 medium size ( about 6 oz each) yellow or other summer squash,
1/4 tsp salt
2 T butter
2 T instant minced onion
4 round buttery crackers (like ritz)
crushed paprika

Directions:
Directions:
Cut squash lengthwise. Place cut sides up in a microwave- safedish with thicker ends toward edges. Sprinkle with salt. Add 2 T water to dish. Cover with lid or vented plastic wrap. Microwave on high 5 to 7 min. Let stand until cool enough to handle. With small sppon scoop the flesh from squash into small bowl leaving a thin shell. Add 1 tsp butter, onion and cracker crumbs to squash and mash together with a fork until well blended; stuff into squash shell. Arrange in oven proof baking dish. Dot with remaining 1 tsp butter and sprinkle with paprika. Bake in 350 º oven for 20 to 25 min. until hot.
