Ingredients:  
1 lb dried red beans
4-5 stalks of celery
large onion
1 cup white rice
1 lb Andouille smoke sausage ( or sausage of your choice)

Directions:
Directions:
Place dried red beans in large pot. Cover with water. Bring to hard boil. Boil for 1 minute. Turn off heat and place lid on pot for 1 hour. After 1 hour, remove lid and add chopped onion and celery finely sliced. Add sausage which has been sliced into small sections. Turn to medium heat and cook until water is reduced and beans are tender. Cook cup of rice in seperate pot. Drain. Pour red beans over rice and serve.

This is a recipe I have perfected over the years. I went to nursing school in New Orleans and I have modeled my beans after what I was served there. The Andouille sausage is spicey and makes the dish.
