Ingredients: 1 lb. lump or backfin crabmeat 2/3 cup Italian style breadcrumbs 1 large egg, lightly beaten 1/3 cup mayonnaise 1 tbsp. Worcestershire sauce 1/2 tsp. dry mustard 1/2 tsp. Old Bay seafood seasoning by McCormick

Directions:In a large mixing bowl, combine all ingredients except for crabmeat. Mix well with fork or whisk. Check crabmeat for shell fragments and gently stir into mixture.
With hands, form crab mixture into crab cake (patties). Saute in butter over medium heat, approximately 4-5 minutes per side or until golden brown and heated through. |

Notes: Crab cakes are as traditional as any food in Maryland. During the summer crab harvest, crabmeat is usually plentiful, and the crab cake reigns king. Crab cakes can be eaten as a main course with many side dishes, as a sandwich on saltine crackers (with mustard), or made into small patties as an appetizer.
Fresh packed or pasteurized crab meat might be found in local food stores. Live Maryland Blue Crabs, steamed crabs, and fresh packaged crab meat are shipped by packing houses from the shores of the Chesapeake Bay all the way to the gulf coast.
