1/4 c.olive oil
1 1/2 lbs boneless beef chuck cut into 1/2" cubes
2 tbs flour
12 oz small peeled pearl onions
1 lb peeled tomatoes
3 cloves garlic, minced (Alma uses more)
1 tsp dried thyme
1 tsp oregano
1 tsp rosemary
1 bay leaf
1 tsp cumin
2 C red wine
1/2 lb feta cheese

Directions:
Directions:
Preheat oven to 350º
Heat oil in dutch oven on medium high.
Toss beef with flour in large bowl and add to pan in batches to brown. Remove from pan.
Add onions to pan and cook until light brown.
Add tomatoes, garlic, herbs and cumin. Return beef and juices and stir in wine. Salt and pepper to taste. Bring to a boil.
Bake covered for 2 hours (Can do ahead until this point).
crumble in feta cheese and return to oven for 10 minutes.
