1lb. chicken thighs
1lb. shrimp
1lb. sausage
1 quart little neck clams
1lb. large scallops
4 cups Arroizo Rice
4 quarts stock - chicken or crab
2 12 oz packages of frozenPeas
2 Yellow bell peppers chopped
2 Red bell peppers chopped
2 Large sweet onions chopped
12 garlic cloves crushed
Saffron - 2-3 pinches
salt and pepper to taste
1/2 cup safflower oil
1 cup flour

Directions:
Start buy prepping the peppers, onions and garlic. Flour the chicken and fry in the pan with the oil. Remove when cooked. Fry the Sausage in the pan then add the peppers, onion and garlic. Fry for 5 minutes. Add the rice and continue frying for another 5 minutes to "sear" the rice. Add the stock slowly to cover the rice, stir and add more stock as necessary to get the rice "al dente". Sear the scallops in another pan with butter until almost cooked. Once the rice is 90% done. add the chicken and stir then layer clams, shrimp, chicken and scallops, finish with the peas. COntinue cooking until shrimp and clams are cooked. Serve with salad and crispy bread.
