1/4 cup yellow cornmeal
1/4 cup all-purpose flour
1/4 cup grated parmesan cheese
1 t paprika
1/2 t salt
1/2 t ground black pepper
1/8 t ground red pepper
1 egg white
2 T skim milk
4 (4 oz) catfish fillets
butter flavored cooking spray
1/2 t sesame seeds

Directions:
Directions:
Combine 1st 7 ingredients - set aside
Whisk together egg white and milk. Dip fillets in milk mixture and dredge in cornmeal mixture
Place on foil lined baking sheet coated with cooking spray
Sprinkle fillets with sesame seeds and coat with cooking spray
Bake at 350 º x 30 minutes or until fish flakes easily when tested with a fork.
