1 (8 oz.) carton nonfat sour cream
3 tsp. vanilla
1 (8 oz.) pkg. nonfat cream cheese
1 pre-baked graham cracker crust
1 (8 oz.) carton Cool Whip
1 pkg. strawberry Junket
1 qt. washed & quartered strawberries

Prepare and bake graham cracker crust. Blend sour cream, vanilla, and cream cheese until well blended. Fold in Cool Whip. Pour into cooled pre-baked crust. Freeze for at least 2 hours. Prepare Junket according to package directions. Let cool, then fold in sliced strawberries. Spread on pie after removing from freezer. Refrigerate until ready to serve. Refrigerate any leftovers.

Mom (Ida McMillan) loved to keep a pie base or two in the freezer. We could always count on this dessert when we visited and loved every bite. Mother was a wonderful baker and whenever I make this dessert it brings back wonderful memories.
