2 c. flour
2 c sugar
1 1.2 c. oil
4 eggs
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. allspice
3 c. graded carrots.

Frosting:
1 8oz softened cream cheese
1 sick butter
2 tsp. vanilla
1 lb. powdered sugar.

Directions:
Directions:
Sift together flour, sugar and spices. Add oil, and eggs one at a time then carrots. Pour into 9X12 pan and bake at 350º until done.

Mix frosting well and frost cake after it has cooled.

Doubling recipe will make a higher cake.

This will also make 24 cupcakes (single recipe)

If you want to cut down on the calories substitute natural applesauce for the oil. Tastes the same.
