5 lbs ground venison
5 tsp Mortons tender quick salt
2 1/2 tsp mustard seed
1 tsp peppercorn (optional)
1/2 tsp black pepper
1/2 Tsp garlic salt
1/2 tsp hickory smoke salt
2 tbsp liquid smoke

Directions:
Directions:
Mix well. Chill 24 hours.
Divide into 5 pieces. Make into round rolls.
Put on broiler pan and bake at 225º for 4 hours.
