French Onion Soup Recipe

1/4 C Butter
4 lg Onions thickly sliced
2 tsp Sugar
1/4 C Flour
1/2 tsp Salt
8 C Beef Broth
Salt and Pepper to taste

Croutons:
8 slices French Bread (1"thick)
1 C Mozzarella Cheese

Directions:
Directions:
For soup, melt butter over medium heat. Add onions and sugar; cook, stirring frequently, for 15 minutes, or until tender and golden. Stir in flour and 1/2 tsp salt. Gradually stir in broth. Bring to a boil over medium-high heat, stirring constantly. Season with salt and pepper. Reduce heat to LOW; cover and simmer 10 minutes

For croutons, preheat oven to 400º. Place bread in baking pan; bake 5 minutes or until lightly toasted. Turn slices over; sprinkle with cheese.
Bake 5-8 minutes longer or until cheese is lightly browned and melted. Ladle soup into bowls and top each with a croûton.

We love this soup, especially in the winter. The secret is to carmelize the onions, giving the soup an almost sweet oniony flavor.
