24 vanilla wafer's
1 cup sugar
1 tsps. vanilla
3 kiwi fruit thinly sliced or strawberries
1 (8 oz) cream cheese
1/4 tsp. nutmeg is opt.
3 eggs
1/2 cup apricot, peach, or orange marmalade preserves

Directions:
Directions:
Heat over to 325'. Line 24 muffin tins with paper or foil baking cups. Place wafer in bottom of each cup. In large bowl, combine cream cheese, sugar, nutmeg if desired, eggs and vanilla. Beat at medium speed scraping sides of bowl occasionally. Pour mixture into prepared muffin cups, filling 2/3 of the cup. Bake at 325' for 20 to 25 minutes or until set. Cool. Melt preserves by microwaving for 25 seconds. Place 1 slice of kiwi or strawberry on each cup. Carefully spoon 1 tsp. or less over each piece of fruit. Place cheese cakes in a covered dish and refrigerate over night. Remove wrapper before serving.

You can freeze these for up to a month, but do so before adding the fruit or preserves. These taste can and look really special.
