2 C Diced Cooked Chicken Breast(can substitute 1
can Kirkland Signature Canned Chicken-Costco)
2 Hard boiled eggs
1/2 C thinly sliced carrots
1/2 C Frozen Petite Green Peas
1/2 cup thinly sliced fresh mushrooms (opt)
1 Can Cream of Chicken Soup
1 C Chicken Broth
Salt, Pepper.& Season salt to taste
1 1/2 C Biscuit Mix
1 C Milk
1/2 Sharp Cheddar Cheese
1 stick melted butter

Preheat Oven to 350
In a greased 2 quart casserole dish layer the chicken,eggs, carrots, peas, mushrooms & cheese.Mix the soup, chicken broth and seasonings. Pour over the layers.Stir together the biscuit mix and milk, and pour over casserole. Drizzle butter over top and bake until topping's golden brown and casserole is bubbly hot.
