1 pkg. Uncle Ben's Wild Rice
1/4 c. margarine
1 t. salt and pepper
1/3 c. chopped onion
1/3 c. flour
1 c. half & half
1 c. chicken broth
2 c. cubed chicken (cooked)
1/2 c. chopped pimento
1/3 c. chopped parsley
1/4 c. chopped almonds
1 small can sliced water chestnuts (optional)

Serves: 6-8

Prepare rice according to directions on box. In large saucepan, melt margarine and saute onion. Stir in flour, salt and pepper. Gradually stir in half & half and chicken broth. Stir until thick. Stir in remaining ingredients. Pour into greased, 2 qt. casserole. Bake uncovered for 30 minutes at 425.
