2 c. sugar
2 t. cinnamon
2 t. baking soda
4 eggs
1/2 t. vanilla
2 1/2 c. grated carrots
2 1/4 c. flour
1 c. corn oil
1/2 c. chopped walnuts


Frosting:
1 8 oz. pkg. cream cheese
1 lb. powdered sugar
1/2 c. margarine or butter
1 t. vanilla

Directions:

Serves: 10-12

Cream together sugar, cinnamon, baking soda, eggs and vanilla. Add carrots, flour, oil and walnuts. Bake in 3- 8" greased and floured round pans for 30-35 min., or a 9 x 13" pan for 40-45 min. Remove from pans and let cool. For frosting, cream all ingredients together. Ice cake, then store in refrigerator.
