4 plum tomatoes; cored, seeded & finely chopped (1 Cup)
1 small English Cucumber; finely diced (12 oz)
1 yellow bell pepper; diced (1 cup)
4 scallions; thinly sliced (1/4 cup)
3 Tb. fresh lime or lemon juice
1/4 cup EVEO
3/4 ts. salt
1/2 ts. pepper

Directions:
Directions:
Combine tomates, cucumber, bell pepper, and scallions in a bowl.
Combine lime/lemon juice and oil in small bowl, whisking to blend. Add salt & pepper. Pour over veggies and toss to coat.
