2 T. oil
1 lb. raw shrimp
1-1/3 c. Minute Rice
1/2 to 3/4 c. chopped green onions
1/2 lb. mushrooms
2 eggs scrambled
1 c. ham cubes, cooked
1-1/4 c. chicken broth
1 t. soy sauce

Directions:
Directions:
Heat oil in skillet. Add onions, shrimp, mushrooms and Minute Rice. Saute until shrimp are pink. Remove from heat; stir in scrambled eggs and ham. Bring remaining ingredients to a boil; stir into rice mixture. Cover and let stand 5 minutes.
