Cake:
1 1/2 c. cooking oil
2 c. sugar
4 large eggs
2 tsp. vanilla
3 c. flour (self rising)
1 tsp. baking soda
3 c. diced, raw apples (peeled, cored)
1 c. chopped pecans
1 tsp. cinnamon
1 tsp. nutmeg

Frosting:
1 8oz. pkg. cream cheese
1 stick butter OR margarine
1 tsp. vanilla
1 16 oz. box confectioners sugar (4x)

For the Cake:
Grease and flour 3 round cake pans. In large bowl, mix well together oil, sugar, eggs, and vanilla. Add flour and baking soda, mixing thoroughly. Then add apples, pecans, and spices. Divide batter equally between the 3 pans. Bake apx. 30 minutes at 350. Allow to cool in pans for a few minutes, then invert onto cooling racks.

For the Frosting:
With frosting ingredients at room temperature, mix together until smooth. Spread on cooled cake. Recipe may be doubled.
