1 1/2 c. sifted flour
2 T. sugar
1/2 t. salt
2 T. milk
1/2 c. vegetable oil


Pie filling:
1 qt. strawberries
1 c. sugar
dash of salt
2 1/2 T. cornstarch
1 T. butter

Preparation time: 50 minutes

Pie Crust: Mix first three ingredients in a medium bowl. Combine oil with milk; pour into flour mixture. Stir to make an oily ball. Press into 9" pie pan with back of spoon. Do not roll or prick. Bake on lower shelf at 400 degrees for 12-15 minutes or desired brownness. (Sometimes I cut foil for edge of crust so it won't get too brown before the bottom of the crust is crunchy.) Cool crust before adding filling.
Pie Filling: Separate berries into two parts (large ones from small ones) Take the small berries and add sugar, salt, cornstarch; mash and cook until thick and clear. Add butter and cool. Put larger berries into cooled crust. Pour cooled filling mixture over berries. Refrigerate until serving at least one hour. Serve with whipped cream or ice cream.

This takes some time, but it's worth it. I make the filling the evening before, but I don't pour into pastry until a few hours before serving. Doesn't keep well, so you might as well finish it off!
