Ingredients:  
1 lb. breakfast sausage
1 onion, finely chopped
1/4 c. celery finely chopped
1/2 c. green pepper finely chopped
1/4 c. parsley finely minced
3 cloves garlic, minced
2 c. uncooked white rice
4 c. chicken broth salt to taste
1/2 tsp. ground black pepper
1 c. thinly sliced green onions

Directions:
Directions:
Saute sausage over medium heat, stirring constantly, until meat begins to brown (about 5 minutes). Add and saute; onion, celery, green pepper, parsley and garlic, stirring constantly, (about 3 minutes). Add rice, broth, and salt/ pepper. Stir well to mix all together. Bring to a boil, then reduce heat to simmer. Cover and cook about 20 minutes, until rice has absorbed liquid. Sprinkle with green onion and serve.
