1 lb. Chicken Breast, cut into cubes.
3 tbsp. Taco Seasoning (= 1pkg. or 1 oz.).
1 to 2 tbsp. Vegetable Oil.
1 Jar (11 oz.) Chunky Salsa.
1/2 c. Peach Preserves.
Hot Cooked Rice.

Directions:
Directions:
Place chicken in a large resealable bag; add taco seasoning & toss to coat. In a skillet, brown chicken in oil. Combine salsa and preserves; stir into skillet. Bring to a boil. Reduce heat; cover and simmer for 2-3 minutes or until meat juices run clear. Serve over Rice.

I skip tossing the seasoning with the chicken. I just add the seasoning right onto the chicken in the pan.
