32 oz. frozen hash browns
8 oz. light cream
8 oz. (+/-) shredded mild cheddar cheese
1 small onion, chopped (not too much!!)
1½ sticks butter, melted
1 roll Ritz crackers
Salt and Pepper

Directions:
Directions:
Mix all EXCEPT ½ stick of butter and place in casserole dish. Mix Ritz crackers with ½ stick melted butter and sprinkle on top. Bake at 350º for 1 hour 15 minutes

VARIATIONS: crumbled cooked sausage, cubed ham, chopped onion, chopped green pepper.
