2 heads Romaine lettuce
1 c. croutons
3/4 c. Parmesan Cheese, freshly grated.
1/4 c. fresh lemon juice
3/4 c. olive oil
mashed garlic to taste
dash Worcestershire
1/4 c. red wine vinegar
1 lrg. anchovy fillet
pepper to taste
1 egg, lightly beaten

Tear rinsed lettuce and chill prior to serving. Blend together 1st three ingredients. Set aside. In another small bowl mash anchovy to a paste; add garlic, pepper and Worcestershire sauce. Add egg and mix well; then beat in lemon juice mixture till thoroughly blended. Pour desired amount of dressing over salad greens, a little at a time. Toss and serve immediately. 8-10 Servings
