8 Manicotti Noodles
1/4 C chopped Onion
1/2 C chopped Celery
2 Tbs Margarine
3 C chopped Chicken
3 Tbs Parmesan Cheese
1 can (6 oz) sliced Mushrooms drained

Cheese Sauce:
4 Tbs Margarine
2 2/3 C Milk
4 Tbs Flour
1 1/2 C grated Cheese

Directions:
Directions:
Cook until tender manicotti noodles.
Saute onion, celery, and margarine. Add to saute, chicken, cheese, and mushrooms.Mix above with 1 Cup cheese sauce.

Cheese Sauce
Melt margarine, add flour and whisk until smooth. Add milk and then cheese. Again whisk until smooth cheese sauce.
Cover bottom of baking dish with sauce. Stuff meat mixture in manicotti and lay in dish. Pour remaining cheese sauce over top.
Bake 350 30 min.

Grandma served this at a PEO dinner and everyone raved about it and had to have the recipe. It is definitely a family favorite.
