½ stick butter
flour
milk
2 eggs
2-3 cups grated cheddar or Mexican mix cheese
4-6 cloves garlic
¾ cup sliced onion
6 cups sliced potatoes - unpeeled
salt and pepper to taste

Directions:
Directions:
In medium sauce pan on medium high burner, melt stick of butter,
add some flour and blend until thick. Add milk a little at a time
blending - keep adding until consistency is smooth and creamy.
Beat 2 eggs in separate bowl. Pour about half of milk/flour/butter mixture slowly into eggs - beat together. Pour egg + mixture back
into remaining milk etc. in saucepan - mix well. Add 2 or 3 cups of grated cheddar or mexican mix cheese. Add milk as needed for consistency. Cook and stir until cheese is melted. Add salt and
pepper to taste. Add cloves of cut up garlic. Pour mixture over the
top of 6 cups sliced potatoes and 3/4 cup sliced onion in baking
dish. Bake in covered dish @ 350, approx 2 hours.
