1 c. pancake mix
1 c. milk
1 egg

Filling
1/4 c. butter
2 Tbls. flour
1 t. salt
1 c. milk

4 oz. shredded Swiss cheese
4 oz. shredded jack cheese

1/2 Lb. mushrooms, sliced
1/2 Lb. cooked bay scallops
1/2 Lb. crab
1/2 Lb. cooked bay shrimp

Crepe:
Beat pancake mix, milk, and egg together until smooth.

Spray 6" non stick skillet with Pam. Heat pan over medium-heat. Pour 1/4 c. batter in hot skillet and rotate pan until bottom is fully covered. Cook crepe until bubbles appear, then turn over and cook other side.
Makes approximately 12 crepes. Place waxed paper between layers of crepes.Keep warm.

Filling:

Melt butter in sauce pan and add flour, stir until blended.
Add salt and milk cook and stir until thick.
Add cheese and stir until melted.
Add mushrooms and seafood heat through.

Spoon down middle of crepe, fold over and drizzle a little sauce on top. Serve immediately.
