2 lbs. new potatoes
1 small onion chopped fine
Oil and vinegar to taste
Maggi seasoning to taste
Salt and Pepper to taste
2 hard boiled eggs, sliced
Chives, chopped for garnish

Directions:
Directions:
Boil potatoes about 20 minutes until tender, but not too soft. Peal potatoes with your fingers while still warm. Slice potatoes about 1/8 in. thick. Mix potatoes with onion, chives, oil, vinegar, and Maggie. Garnish with sliced eggs and chives. Traditionally, German potato salad is served warm, but it is also good cold!
