1 c. coconut milk, 1 clove garlic, 1 shallot, 1 tsp. red curry, 1 T. chile paste, 1 cup ground roasted peanuts, 1 T. tamarind or to taste, 1 tsp. sugar or to taste, salt.

Directions:
Directions:
In a blender, place 1/4 cup coconut milk, garlic, shallot, red curry and chile paste, whirl until blended. Pour into a large saucepan, add remaining coconut milk, and bring to a boil. Add peanuts, tamarind, sugar, and salt to taste.
