1 Lb red beans (soak over night)
1 onion, chopped
1 bunch green onion, sliced
7 cloves of garlic, sliced
1 rib of celery, sliced
1/2 c. parsley, chopped
1 green pepper, chopped
1/2 c. Ketchup
1 Tbls. Worcestershire sauce
1 1/2 t. Tabasco sauce
1 bay leaf
1 t. thyme
2 t. Tony Catcher's Cajun seasoning
1 Lb. Smoked Sausage, cut up

Cover beans with water and let soak over night. Drain and rinse.
Cover with water again and add all of the ingredient. Bring to a boil, reduce the heat and simmer for 1 1/2 hours.

Remove bay leaf and serve over hot rice.
