1-1/2 lbs. ground beef
1 can golden mushroom soup
1 c. small bread cubes
1/4 c. finely chopped onion
1 egg, slightly beaten
1/2 tsp. salt
Generous dash pepper
2 c. mashed potatoes, prepared
1/4 c. water
1-2 tbsp. drippings

Directions:
Directions:
Mix thoroughly beef, 1/2 cup soup, bread, onion, egg, salt and pepper. Shape firmly into loaf; place in shallow baking pan. Bake at 350 for 1 hour. Frost meatloaf with potatoes; bake 15 minutes more. Blend remaining soup, water, and drippings. Heat. Serve with meatloaf.
