Ingredients: 6-8 slices of bacon, cooked crisp (save bacon grease) 6 medium sized potatoes (Yukon Gold are great) 1/3 cup bacon grease 3/4 cup onions, chopped 2 Tbsp flour 1-2 Tbsp sugar 1 1/2 tsp salt 1/2 tsp celery seed dash of pepper 3/4 cup water 1/2 cup vinegar

Directions:Serves: 6 Preparation Time: 45 minutes
Boil 6 potatoes in their skins until tender. Peel and slice thinly into bowl. Fry bacon until crisp. Save bacon grease. Cook chopped onions in 1/3 cup of bacon fat in a large skillet until yellow. Mix into onions, flour, sugar, salt, celery seed and pepper. Then gradually stir in water and vinegar. Cook, stirring until mixture boils. Boil for one minute. Pour over potatoes. Break crisp bacon into pieces (saving some for garnish). Gently toss, then cover and let stand until ready to serve. Serve in large bowl garnished with pieces of crisp bacon. |

Notes: This potato salad needs to be served warm. It can be kept in a crock pot at room temperature and then reheated at low for one hour. It is a favorite of the Lautzes.
