4 skinless, boneless chicken breast
salt & pepper
1 onion, finely chopped
4 cloves garlic, finely chopped
1 1/3 c. barbeque sauce
1/2 c. apple cider vinegar
Hot pepper sauce
6 Kaiser or French rolls, split
6 oz. shredded Monterey Jack cheese (about 1 1/2 c.)

1. Season chicken with salt & pepper & place in a heavy pot with the onion, garlic & just enough water to cover (about 1 1/2 c.) Add bbq sauce, vinegar & a few drops hot sauce & bring to a boil. Reduce the heat & simmer until the chicken is cooked through, about 15 minutes. Remove chicken from the sauce & shred with 2 forks.
2. Boil the sauce, skimming occasionally, until reduced by half, about 15 minutes. Season with s&p. Add the shredded chicken & heat through. Spoon the mixture onto the rolls & top with cheese.
