3 large meaty tomatoes cut in thick slices or 1 " chunks
1/2 green pepper, cut in 1" pieces (optional)
1/2 c. olive oil
2 T. lemon juice or cider vinegar
2-3 cloves of minced garlic
1 t. salt
1/2 t. ground fresh pepper
1 Tbls chopped fresh oregano (or 1/2 t. dried)
1 Tbls. fresh thyme (or 1/2 t. dried)
1 Tbls sugar

Directions:
Directions:
Place tomatoes in bowl that has tight lid. (tupperware)
Mix the rest of the ingredients in a measuring cup and stir to blend together.
Pour over the tomatoes and onions, marinate for a minimum of 2 hours flipping the bowl upside down a couple times to marinate evenly.
