3 medium size ripe tomatoes
1 medium size ball of FRESH mozzarella
2-3 green onions
10 leaves of fresh basil (approximately)
dash of salt
dash of pepper
1 tsp of sugar
1/4 cup extra virgin olive oil (approximately)
1/4 cup of balsamic vinegar (approximately)

1 baguette

Directions:
Directions:
1. Thinly slice the tomatoes and mozzarella.
2. Chop the green onion and finely dice the fresh basil.
3. Lay the tomatoes and fresh mozzarella slices on a plate. Lay the tomato slice down first and top with a mozzarella slice. Continue this around the plate and into the middle of the plate until all slices are used.
4.Sprinkle the green onion and basil over the tomato and mozzarella.
5. Sprinkle 1 tsp of sugar and salt/pepper over the tomatoes and mozzarella.
6. Drizzle olive oil and balsamic vinegar over entire salad. (you may add more or less of the olive oil & balsamic to your liking)
7. Allow the salad to sit out & marinate while you are preparing the bread.
8. If your baguette is already baked, thinly slice it and place all the slices on a cookie sheet. Place under the broiler (low) until toasted.
9. To eat, scoop up a tomato and mozzarella slice and place on top of the baguette slice.
