2 tbsp. olive oil
5 tbsp. butter
4 boneless, skinless chicken breast
salt and pepper to taste
2 tbsp. flour
1 onion, minced
2 c. chicken broth

Directions:
Directions:
1. Heat oil and 1 tbsp. butter over medium heat. Salt and pepper the chicken. Fry until brown, turning halfway through. Take chicken out and keep warm.
2. Add 4 tbsp. butter to same pan. Add 2 tbsp. flour. Whisk. Add onion. Whisk in chicken broth. Heat to boiling. Turn down heat. Add chicken back in. Cook for 20 more minutes, or until chicken is done.
