Ploye (see Bread section for recipe)
1 lettuce leaf with ribs removed
1-2 tbsp homemade soft cheese or non-dairy cheese (see Misc. section for recipes)
1/4 tsp small capers
1 tsp chopped red onion
Fresh black pepper
1-2 slices smoked salmon

Directions:
Directions:
Place the ploye flat on the counter. Lay a piece of lettuce on top. Spread cheese over the lettuce. Sprinkle capers and onions over the cheese and grind some black pepper on top.
Arranged the smoked salmon slices next to each other in the middle, then begin to roll the pancakes up along the length of the slices of salmon. This will ensure that every bit will contain salmon.
Place seam side down and slice into 1/2" thick slices. Place on plate.
