"The most remarkable thing about my mother is that for thirty years she served the family nothing but leftovers. The original meal has never been found."--Calvin Trillin

Ingredients:
Ingredients:
3 cups chicken broth
2 cups milk
1 cup polenta or yellow cornmeal
2 tsp olive oil
1/2 pound hot Italian sausage, casings removed
2 cloves minced garlic
1/3 tsp hot chili flakes
1 lb. washed and cut mustard greens
1/2 to 3/4 cup shredded Parmesan cheese
Salt and pepper

Directions:
Directions:
In a 3-4 quart pan, mix broth, milk and polenta. Stir over high heat until boiling; reduce heat to low and stir often until polenta is smooth to taste (12-15 minutes). If polenta is thicker than desired, stir in 2-4 tbsp of water.
Meanwhile, pour oil into a 5-6 quart pan over high heat. When oil is hot, add sausages and break apart with spoon. Add garlic and chili flakes; stir often until meat is browned and crumbled, about 4 minutes. Add mustard greens and stir often until wilted, about 2 minutes.
Spoon polenta equally into 4 bowls. Top equally with sausage-mustard green mixture. Sprinkle with cheese and add salt and pepper to taste.

Note: if you're buying mustard greens that aren't prepackaged, look for bunches with crisp, brightly colored leaves and tender looking stems. Store them unwashed and in a perforated plastic bag in refrigerator--they should keep for at least 3 days.
