2 - 12-15 oz. thawed Cornish game hens
melted butter

Sauce
4 oz. butter
1 lb. fresh mushrooms sliced
1 tsp. finely chopped onion
1 C. cream
1 oz. dry sherry

Bake 425 about 1 hour 9x11 or 9x13 dish
Wash and pat dry the game hens. Can rub salt and pepper in cavity if desired. Place game hens in dish and be sure the game hens have a little space between them. Brush hens with butter occasionally while baking. Test for doneness with a fork or see if the leg moves freely.

Sauce

Over high heat, cook butter, mushrooms, and onions till tender. Lower heat, add cream and sherry and simmer till thickened. Stir frequently. It will be like a thin sauce. Keep this warm not hot so it doesn't reduce the temperature of the hens.

The last 10 min. brush the sauce over the hens every few minutes. I use a pastry brush and use mostly the juice but be sure to have all of the contents on for a few minutes. Serve immediately.
