Topping:
1/3 cup light mayo
2 tsp lemon juice
1 small clove garlic minced very fine (or put thru press)
2 tsp Dijon mustard
2 TBS parmesan cheese
1 green onion sliced very thin
1/2 tsp Tabasco (more if you want more heat)
2 lbs Halibut fillets
2 tsp lemon juice
salt and fresh ground pepper to taste

Directions:
Directions:
Pre heat oven to 450
Prepare topping, mix all ingrediants together and set aside to marry.
Place fish on broiling pan, sprinkle with lemon juice
salt and pepper. Bake 12 minutes per inch until fish tests done.
Remove fish from oven, raise rack to broiling position, turn on broil, spread fish with topping and broil til golden brown.

This is your basic fabulous fish dish. I've added chopped red peppers to the topping and it's wonderful. You can add more onion, or add celery, jicama, waterchestnut, it works with it all. Some grilled spuds, crispy salad, and a buttery Chardonnay, and dinner is served..
