4 yellow banana peppers
2 green banana peppers
2 jalapeno peppers
4-5 large tomatoes
2 garlic cloves, minced
1 tsp. chopped fresh basil
1 tsp. chopped fresh parsley
1 tsp. chopped fresh rosemary
1 tsp. chopped fresh oregano
2 ounces smoked cheddar cheese
1/2 cup olive oil
1 tbsp. lemon juice
1 tsp. salt
2 tsp. sugar
garnish fresh basil sprig

1.) Remove and disgard seeds from peppers and tomatoes. Dice peppers and tomatoes, place into a large bowl. Toss in garlic, herbs, and if desired, cheese.
2.) Stir together oil, next 3 ingredients, and if desired, sugar; add to tomato mixture.
