2-1/2 c. sugar
1/2 c. light corn syrup
1/2 c. water

B:
2 egg whites
1 tsp. vanilla
few drops of food coloring, optional
nuts, optional

Directions:
In a heavy 2 qt. pan stir together A: and clip candy thermometer to pan. Cook and stir until over med.-high heat until it boils. (approx. 6 min.) Reduce heat (gentle boil) and cook without stirring to 260º. Remove pan from heat.

Beat eggs whites in a lg. bowl until stiff peaks form. Continue beating and very slowly add the hot syrup. (The syrup stream should be no more than 1/8" thick.) This should take at least 3 minutes. Add vanilla and continue beating for 5 - 7 minutes or until mixture begins to lose its gloss and holds a shape. (nuts can be added at this point.) Working quickly, drop by spoonfuls onto wax or parchment paper.

**If mixture is too stiff add a few drop of water, if too runny beat a little longer.
**Don't try to double the recipe!!
