1 cup butter (half chicken fat)
1 cup sugar
1 tsp cream of tarter
2 eggs
2 1/4 cups flour
1/2 tsp salt
1/2 vanilla
1/2 tsp lemon extract

Directions:
Directions:
Cream butter, add sugar and beat well; add eggs, the flour and rest of ingredients. Put in wax paper and make a roll. (Dough will be sticky.)

Freeze. Remove paper, slice and sprinkle with sugar. Bake 375 for 8 - 10 minutes.

I use fat from turkey or chicken. These are a real crisp and tender cookie. Grandpa Trail (Lee) really liked these.
