2, 10 oz. pkg. frozen chopped spinach
1 lg. onion minced
1/4 c. margarine
1/2 t. salt
1/4 t. pepper
3 cloves of garlic minced
3/4 c. shredded Cheddar cheese
3 eggs
3/4 c. shredded Monterey Jack cheese

Directions:
Directions:
Preheat oven to 375.
Thaw spinach and drain well. Squeeze to remove the extra moisture.
Saute the onions and garlic in the margarine until tender.
Add spinach to onion mixture. Mix well and let sit while greasing a 9" pie plate or 1 qt. casserole dish.
Add beaten eggs to the spinach. Stir to blend together.
Spoon 1/2 the mixture into the greased plate.
Top with the cheddar cheese.
Add rest of the spinach and top with the jack cheese.
Bake at 375 for 40 minutes.
